Pasta

Somos fans de El Comidista pero solo la semana pasada me atreví a seguir una de las recetas del experto. Hicimos pasta con pesto y alcachofas, la podéis ver en

Here is my humbler version:

For 4 people: 400 gr ziti or similar type of pasta, 6 medium size artichokes , 40 gr nuts, 50 gr Parmesan cheese, 20 gr basil, 1 clove of garlic, 1 spoon grated orange rind, 1 lemon, olive oil, salt

Prepare a bowl with water and lemon juice, peel the artichokes until the base is yellow. Cut the artichokes in four pieces and then every piece into two. Fry the artichokes in a frying pan with some olive oil and a little bit of salt during some 5 minutes. Add a glass of water, lower the fire and cook during 8 minutes covered and 8 minuted uncovered until the liquid has almost disappeared and the artichokes are tender. Meanwhile, boil enough water with some salt. Peel and cut the garlic, crush it with a food processor. Add basil and the nuts (the paste should not be homogeneous but rather with grain). Grate the cheese, add it into the paste and mix it. At the end, add grated orange rind and keep mixing the paste while you slowly add olive oil until you get a creamy mixture. Cook the pasta, when it is done, serve it with the artichokes and pesto.
